Malawi Peppermint Tea Panna Cotta by Darren Rogan

Ingredients

Panna Cotta

300ml Full Fat Milk

300ml Double Cream

5g Lincolnshire Tea & Coffee Co. ‘Malawi’ Loose Tea

25g Caster Sugar 

3 Gelatine Leaves

Method

  1. Soak gelatine in cold water.
  2. Warm milk and cream to 90˚C, add the tea and sugar and infuse for 2 hours.
  3. Pass through a fine sieve and re-warm to 90˚C.
  4. Take the gelatine out of the water and squeeze out the excess water.
  5. Add the softened gelatine to the cream and mix. Stir until completely dissolved.
  6. Tip into 6 dariole moulds and place in the fridge to set for at least 6 hours.
